Everyone needs to add fiber to their diet, especially Americans. We eat way too much processed food. Usually eating fiber holds little appeal. This salad however, is lip smacking and easy to make. And yes, there is mayo in it, but not much. My Mother-in-law, Joan, is credited with this treat of a salad.
2 C chopped broccoli flowerettes 1 1/4 C dried cranberries 1/4 C sugar
1 small onion chopped 2 1/2 Tbs Cider-vinegar 4 C chopped purple cabbage
1/2 C mayonnaise 1/3 C bacon bits (optional)
Mix mayo, sugar, vinegar, and bacon bits and set aside. Chop veggies and place in large bowl with cranberries. Pour vinegar mixture over veggies and chill.

I’ve never seen that salad made with red cabbage. It makes it colorful & beautiful.
This really seems like a nice recipe. I will try this out on the weekend.
